Processing Method: Washed – After removing the outer skin, the beans are fermented in water tanks for 14–36 hours to break down the mucilage. They are then washed with fresh water and dried either on patios, raised beds, or in some cases mechanical dryers until reaching ~11% moisture, before being stored and milled.
